Puttu and Kadala Curry
Puttu is a popular breakfast dish. It is a rice cake cooked with grated coconut. The dish is usually served with Kadala Curry which is black chickpea (kala chana) cooked in a spicy, thick coconut gravy. Puttu also has variants like Chicken, Prawns and Beef Puttu.
Appam with Stew
Soft and moist in the center with a wafer thin circumference, these are lace hoppers that are made from rice, sugar, fermented coconut water/yeast. Appams are a little sweet, and are best enjoyed with stews. A typical stew is a thin gravy made with coconut milk. Stews can be vegetarian or non-vegetarian, depending on your choice.
Kappa is steamed tapioca with spices. Kappa Erachi is primarily a tapioca biryani which is popular in middle Kerala. This biryani also contains beef.
Sadya and Olan
The Sadya is a variety of vegetarian dishes served on a banana leaf. These exotic dishes can vary from 13-60 dishes, depending on the occasion. This includes accompaniments (called Kootan) like Parippu curry (dal served with ghee),rasam, sambar, pulisseri (curried buttermilk), olan (veg stew in coconut milk), payassam to name a few.
This is the only biryani recipe in Kerala. It is made from short grain, thin rice, heavily cooked with spices and chicken/mutton/beef pieces. The aroma of the spices and herbs is overwhelming to say the least.
Meen Curry Rice
This is one of the most common dishes down south. Meen curry is a preparation of coastal fish curry which has a unique mix of flavours influenced from China and Portugal. Onions, okra, spices and garlic served with sea fish in a thin curry, Meen Curry Rice is again one of the staple diets of Kerala.
Chicken Sukka and Kerala Porotta
Chicken Sukka primarily is a dry preparation of chicken, cooked with a variety of spices, ginger-garlic paste, curry leaves and mustard seeds. Malabar Porotta is a roti made from maida flour and eggs. A little heavy on the stomach, these parottas can be enjoyed with thick and semi-dry gravy preparations.
Dosa is one of the most delicious foods available in India. Neer Dosa is a dosa that is prepared with large amounts of pure ghee and roasted till it is as crisp as it can get. Combined with sambhar, this is enjoyed all across the country.
This is a traditional kheer made of rice and milk and sweetened with sugar. This one is also lightly flavored with spices.
