Sweet somethings for Ganeshotsav

When you celebrate Bappa’s birthday (or Ganesh Chaturti to be more precise), you always look forward to gorging on yummy modaks (ukadiche or steamed). And if you have the Ganapati idols installed in your homes, guests are bound to come. But we hope you are not going to keep them happy by serving just modaks. Why not go a little ahead and whip up some small delights so that your guests go back home smiling? We wants you to try out some lip-smacking delights at your homes during the Ganeshotsav, courtesy Aniruddha Limaye, Executive Chef, Courtyard Marriott, Pune Hinjewadi. The chef has prepared the dishes keeping the auspicious moment in mind. As per the chef’s advice, these dishes are perfect either as sweets by themselves or as prasad for the aarti.


Chickoo Barfi2Ingredients:
Ripen Chickoo – 1 kg
Mawa – ½ Kg
Sugar – 200 Gm
Cardamom – ½ Tsp
Peel the chickoos and puree them finely. Take the mawa in a kadai and stir-fry for a minute till it is soft. Then pass it through a sieve so that no lumps are found. Combine sugar, chickoo puree and mawa in a kadai and cook it on a slow fire until it becomes a thick mass. Remove the mix from fire. Put it in a greased flat plate and the spread evenly. Cut it into squares or triangles. Press a piece of cashewnut over it as a garnish.


Stuffed BananasIngredients:
Ripened but firm Bananas – 6
Freshly Grated Coconut – 1 Cup
Ghee – 2 Tsp
Sugar – ½ Cup
Cardamom.- Pinch
Take ghee in a kadai and then sauté the coconut along with sugar for two minutes. Add cardamom powder to it. Cut the bananas lengthwise and then stuff the coconut mix in the bananas. Take a few banana leaves and keep them on the flat grill upside down. Pour a bit of ghee over it. Also sprinkle a bit of milk over and then lay the bananas. Cover and cook on a very slow flame until the bananas are soft.


Belfal KheerIngredients:
Soft Belphal – 1 Kg
Sugar – 200 Gm
Milk – 1 Litre
Cardamom – Pinch
Ghee – 3 Tsp
Take out the flesh of the fruit. Sauté it in ghee along with sugar and a pinch of cardamom powder. Add milk and let it simmer for 15 minutes, until it becomes pouring consistency (that is neither too thick nor too thin). Serve hot or cold.
